MAKE IT KID-FRIENDLY

When serving soup to children, let them play dress-up with
their bowls by offeringfun toppers. You can serve an
assortment of bite -size crackers in different shapes and
colors. Or, for a hands-on approach, let the kids cut bread
slices, puff pastry, or pie pastry in shapes with small cookie
cutters. Bake until crisp and golden. For a healthful topper for
Beet and Apple Soup, slice apples crosswise to reveal the
star-shape core (be sure to remove the seeds). Crumbled
bacon, grated cheese, sliced pickles, sunflower seeds, or fried
tortilla or wonton wrapper strips add variety. Ladle up the
kids* bowls first so the soup can cool. Serve with small spoons
for them to scoop up every bite.
